Banana Chocolate Chip Biscotti

Biscotti is such a wonderful treat with coffee or tea.  I have always loved it, but was intimidated by how complex it sounded.

This recipe is from Betty Crocker, and it is so simple and easy to make.  There is no reason to be intimidated!

Ingredients:
1 cup sugar
1/2 cup margarine or stick butter, softened
1/2 cup mashed very ripe banana (1 medium)
1 teaspoon vanilla
2 eggs
3 cups all purpose flour
3 teaspoons baking powder
1/4 teaspoon salt
1/2 cup miniature semisweet chocolate chips

melted chocolate for dipping

Directions:

Heat oven to 350. Grease large cookie sheet.

Beat sugar and butter in a large bowl with electric mixer on medium speed, or mix with spoon. Beat in bananas, vanilla, and eggs til smooth. Stir in flour, baking powder and salt. Stir in chocolate chips.

Divide dough in half. Shape each half into 10×3 inch rectangles on cookie sheet with greased hands (dough will be sticky).

Bake about 25 minutes or until toothpick inserted in center comes out clean. Cool on cookie sheet 15 min.

Cut crosswise into 1/2 inch slices. Turn slices cut side down. Bake 10-12 minutes or until golden brown and dry on top. Turn cookies. Bake about 10 minutes longer or until golden brown. Remove from cookie sheet to wire rack. Once cooled, dip the flat side into your melted chocolate.
