Wildfire Chicken Salad (Bob Evans Copycat)

I can’t tell you how much joy I have when I make something that we love out…at home!

One great thing when it comes to making a copycat recipe is that you are usually able to feed your WHOLE family on what it would cost for just one dinner! To me, that one thing alone is worth it.

Oh, the needless money we spend eating out…

Plus, I love being able to modify the dishes and make them healthier. This Wildfire Chicken Salad is a good example of the healthier part. I have always loved this salad at Bob Evan’s, but it comes with fried chicken and fried tortilla strips. That packs in a lot of calories that I could do without.

**I didn’t include exact amounts, because it is one of those things you just throw together and make them the size you want.

Ingredients
Grilled Barbecue Chicken, Cooked and Sliced (1/2 breast per person)
Lettuce
Cheddar Jack Cheese
Corn
Cherry Tomatoes
Green Onions
Tortilla Strips
Barbecue Sauce, for drizzling

Dressing:
Ranch Dressing and Barbecue Sauce (mix equal parts)

Definitely a keeper! And I bet the mix of bbq and ranch is tasty. I also love that it has corn in it.
