Nutty Buddy {Ice Cream Dessert}

by Katie on July 19, 2011

I don’t know about where you are, but here in Ohio we are experiencing some nasty hot weather. It’s like an oven – you can’t even breath when you step outside.

In efforts to keep us cool…I wanted to share a delicious ice cream dessert recipe with you! You are really in for a treat, my friends!

I could eat my weight in Soft Froster Sugar Cookies and Pecan Pie Bars, but Nutty Buddy Ice Cream Cake is my most FAVORITE dessert EVER!  It’s held #1 place since I was small!

It sounds so simple, but it tastes amazing! You are going to have to trust me and try this out asap. The great news is, you don’t even have to turn your oven on!

Why do I love this ice cream dessert so much?

Okay, well, let me tell you…

It all starts with an oreo crust and you top it with vanilla ice cream. {Please don’t do a disservice to this dessert and steer away from vanilla. I’ve tried that. I’m not a vanilla person, but it is a must for this recipe.} Then you add a nice thick layer of homemade hot fudge, and THIS is what makes the dessert stand out from the crowd.

Finally, you top it all off with a nice dosage of slightly salty peanuts! Don’t try to get all fancy pants and use pecans…that is even worse than using something besides vanilla ice cream. You need the cheap, salty peanut…it just works. Again, just trust me.

There you have it. The best dessert ever. I’m not even kidding. You. Must. Make. It!!

Nutty Buddy

  • 1 package Oreo cookies
  • 1 stick butter, melted
  • 1/2 gallon vanilla ice cream
  • Fudge:
  • 1 can evaporated milk
  • 6 oz. chocolate chips
  • 1 stick butter
  • 2 cups powdered sugar
  • 1 cup peanuts

  1. Crush oreos and mix with melted butter. Press into a 9×13 pan and freeze until firm. Spread ice cream over oreos. This is easily done by slicing ice cream and laying over crust. Put back into freezer until fudge is made and completely cooled.
  2. Mix evaporated milk, chocolate chips, butter, and powdered sugar in a saucepan. Bring to a boil. Reduce heat to maintain a slow boil and cook over heat for 8 minutes. Cool completely and pour over ice cream. Top with peanuts and freeze.

Do you have a favorite type of ice cream dessert?

I was at mom’s today and looking through her recipes I found the original recipe card of this nutty buddy from her aunt or something…she said she had it first when she was a kid. When I said it been around forever…I meant when I was a kid. I had no idea it’s been around that long ;)

I know what you mean about eating the WHOLE pan! I made some for my birthday and Daniel and I did just that…over the course of a week or so :)

This is my favorite dessert in the entire world!!! It always reminds me of summer time at Mamaw’s house!!!! Everybody needs to try this—you will never want a regular cake again for your birthday! (sorry, kate!)

Kimery, I know mom was always upset we didn’t want her to make us a “real” cake!

Girl I am HATING this weather too! Even when I drive home from work, I’m only in the car for 10 minutes and I have sweat back (I don’t have ac in my car)! It’s like I have to change twice a day because my shirt gets drenched… ew! I’m over it lol. So thanks for this tasty treat to keep me cool :)

Katie July 21, 2011 at 3:52 pm

Oh Desi…I feel bad for you with no ac in your car! It is just too hot out right now…and there is no end in sight!

Everyone came over here for dinner and I made it for dessert…….SOOO yummy!!!

I’m getting a little “fluffy” from ALL the yummy foods of summer tho!!!!

I’m needing to hit the treadmill a little extra….but I’m having
trouble getting motivated!!! LOL

Katie July 24, 2011 at 10:32 pm

And why didn’t you invite me to come down and partake in your nutty buddy deliciousness?

I know what you mean about getting “fluffy”! You need to come up and come to my aqua fit class with me. Mom and I have such a FUN time with the old people :)

Krista July 26, 2011 at 11:24 am

I’ve made this cake for years, but always use a jar of hot fudge topping. I’m going to try your more “homemade” version soon. It looks great!
