Summer Skillet Lasagna

I loved making this summer veggie lasagna the other week!  Not because it was delicious. Or easy. Or a one dish meal. Though it was all three.

I loved it because I got to put my first vegetables to use. Finally. It’s been a long road.

I felt like such a good little gardener. I really needed that boost…my garden, if you can even call it that, STINKS!

I take care of it the best I know how, but lets face it…I don’t have a country gardening bone in my body.  The rabbits are making a meal out of my zucchini and I don’t know how to stop the little stinkers.

Let’s not even get started on my tomatoes.  I was just sure were going to be bigger and better than ever.  They got all nice and big and now are going to remain forever green.  They haven’t made progress in weeks.

I hope your garden is doing better than mine!  If it isn’t, here is the good news…you can still make this.  Just head to your grocery store or farmer’s market and pick up a zucchini and squash.  Easy as that.

Ingredients:
2 Tablespoons olive oil
1 onion, chopped fine
4 garlic cloves, minced
1 (28 oz.) can diced tomatoes
salt and pepper
10 curly edged lasagna noodles, broken into 2 inch lengths
1 small zucchini, cut into 1/2 inch chunks
1 small yellow squash, cut into 1/2 inch chunks
1/4 cup fresh basil
1 cup ricotta cheese

Directions:
heat oil in large skillet over medium-high head until shimmering. Add onion and cook until softened, about 3 minutes. Add garlic and cook until fragrant, about 30 seconds.

Drain tomatoes, reserving liquid. Add enough water to tomato liquid to make 2 cups. Add liquid and 1 teaspoon salt to skillet. Scatter noodles into skillet, layer tomatoes over noodles, and bring to simmer. Reduce heat to medium and cook, covered, stirring occasionally, for 10 minutes. stir in zucchini and squash. Cook until noodles and squash are tender, about 8 minutes.

Add basil and 1/2 cup cheese, stirring until sauce is creamy. Season with salt and pepper to taste, dollop remaining cheese over noddles, and serve.

Ok, so I need your help. I want to this out, but I need a “name” for my kiddos… like the “4 cheese spaghetti pie”. :)

Hmmm…I’m not sure. Maybe just call it skillet lasagna. Add in more cheese and chop the veggies up into smaller pieces!! They may like the other skillet lasagna that I posted a little better?!?
