Menu Plan Monday

I’m really not sure how the menu plan is going to work out this week. One of us will be away every night. Instead of making a plan for each dinner, I am going to try just scheduling a couple meals to eat at some point in the week. I’m going to rely on my trusty friend, the crock pot for most of my meals!

Also, we are leaving Friday morning for vacation so I don’t want to purchase a ton at the grocery store! We will be headed down to Charleston and then on to Hilton Head for a week. I’m excited to hit the beach and relax, but don’t you worry…I’m going to work extra hard to make sure I have plenty of posts scheduled for while I’m away:)

What do you all plan for dinner when you know you are going to be too busy to cook?


Easy Dinners:
Chicken Enchilada Soup (crock pot)
Green Sour Cream Enchiladas (freezer)
Spaghetti Sauce with Turkey Italian Sausage (crock pot)
Apple Crock Pot Oatmeal

Okay, okay, you must try out those green sour cream enchiladas, as I am patiently waiting for the recipe to post. :) haha. I LOVE your crockpot oatmeal and the enchilada soup is YUMMY! I think I just might have to try the slow cooker spaghetti sauce.

I do rely heavily on my freezer meals or quick meals on busy soccer nights. We also do soup and sandwich nights probably once a week on the “leave early, out real late” nights. :)

Actually I have tried the enchiladas out when I was freezer cooking them. They were awesome. I will try to get the recipe out next week or the following week.

Soup and sandwich night is always good and easy! I can see why you do it once a week :)
