Banana Crumb Muffins

I’ve been experimenting with leftover bananas again!

It’s a good thing, because I just discovered this awesome muffin recipe.  I know that I recently stated that Peanut Butter Banana Cake was my new favorite leftover banana recipe, but it may have to share its spot with this Banana Crumb Muffin.

There is room for two favorites, right?

Normally I don’t stray far from my usual banana muffin recipe, but the crumb topping got me on this one.

I have a real thing for crumb topping. Gets me every time…

I found the recipe on and it had a 5 star rating with over 6,000 reviews. I figured it had to be pretty good. After tasting one, I sure was happy I had decided to double the recipe for the freezer. They are great to pull out for breakfast or a quick snack.

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup oil
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.

In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and oil. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Yields: 10 muffins

I just might have to make up a batch and thrill the kiddos one school morning! They would love them!!! Mommy and Daddy would too :) You can have 2 favs, although your banana peanut butter cake is going to be tough to beat!

Made these yesterday and they were a hit!! I used half whole wheat flour and a little less sugar to make myself feel better about my kids eating them. :) Thanks for sharing the recipe! I really enjoy your blog!
