Mom’s Breakfast Casserole

My mom’s breakfast casserole has been a family favorite for many years. We all love it!

I think breakfast casseroles are one of those things that are just hard to find a good recipe for. I pretty much stick to this recipe alone, because I have had so many so-so breakfast casseroles.   Sometimes it’s better to stick to what you know is good, right?

Not only is this recipe great, but it’s also easy, cheap, and versatile. You can change the meats and cheese to suit what you have on hand.

1 lb roll sausage
1 (8oz) can refrigerated crescent dinner rolls
2 cups (8 oz) shredded mozzarella cheese
4 eggs beaten
3/4 cup milk
1/4 teaspoon salt
1/8 teaspoon black pepper

Preheat oven to 425 degree F. Crumble sausage into medium skillet. Cook over medium heat until browned, stirring occasionally. Drain off any drippings. Line bottom of greased 13×9 inch baking dish with crescent roll dough, firmly pressing perforations to seal. Sprinkle with sausage and cheese. Combine remaining ingredients in medium bowl until blended; pour over sausage. Bake 15 minutes or until set. Let stand 5 minutes before cutting into squares; serve hot.

Refrigerate leftovers.

Makes 8 servings

Thanks to Wanda who sent me this recipe awhile ago “Dana’s Egg Casserole”, my family and I have been enjoying your mom’s casserole almost weekly! It is YUMMY!!! We use cheddar too, and have made it with bacon… DELICIOUS!!
