Sausage Morning Mix Up

This is a variation of a recipe I posted several months ago, Morning Mix-Up.   We love this dish, and I try to keep all of the ingredients on hand all of the time.  It seems like there are always those nights that I something happens and I can’t get to my planned dinner…so we can always fall back on this easy 20 minute dinner.

We love the recipe as it was posted originally, but I thought I would try changing it up.  I used sausage, peppers, and mozzarella cheese.  It was delicious!  If you didn’t get to try the recipe when I posted it the first time…you really need to try it now!  It’s delicious!

1/2 pound hot sausage, cooked
2 cups frozen shredded hash brown potatoes
1/2 cup chopped onion
1/2 cup chopped red pepper
2 tablespoons vegetable oil
6 eggs
salt and pepper
1 cup shredded mozzarella cheese

In a skillet, saute potatoes, sausage, peppers and onion in oil for 10 minutes or until potatoes are tender. In a small bowl, beat the eggs, salt and pepper.

Add to the skillet; cook and stir over medium heat until eggs are completely set. Remove from the heat and gently stir in cheese. Spoon onto a serving platter.

Serves: 4

This looks SO delicious right about now. I love “Breakfast for Dinner” nights, it is comfort food for me. I can’t wait to add this to my menu list soon.
