Chicken Pot Pie Soup

One day while making chicken pot pie the thought struck me that it would make a great soup! I ran to get my purple notebook out of my purse…I just HAD to write this one down before I forgot.

Yep…I keep a little Moleskine notebook in my purse so whenever a food idea strikes me I can write it down. Clever, huh? I’ll tell you who is really clever…it’s the inventor of Moleskine notebooks. A great notebook that opens flat. An awesome thing for a lefty like me.

I digress.

So anyways…I had this genius idea of making chicken pot pie soup. I had never heard of it. I had invented it as far as I was concerned. Then I googled it and found out that everybody and their mother was making it long before me.

Maybe I live under a rock or something? But I had never heard of chicken pot pie soup.

After realizing that I was not the creator I decided that the only logical thing I could do was create my own recipe for it.  And I did. And we enjoyed it very much. And I know you will too. :)

Chicken Pot Pie Soup

Serving Size: 6-8


  • 1/2 cup celery, diced
  • 1 cup onion, diced
  • 1 cup carrots, diced
  • 1 can green beans, drained
  • 1 cup peas (I cooked frozen)
  • 1/4 cup butter
  • 1 clove garlic
  • 1/2 teaspoon Thyme
  • 1/3 teaspoon pepper
  • 1/2 cup flour
  • 4 cups chicken broth
  • 1 1/2 cups milk
  • 2 1/2-3 cups chicken, cooked and chopped
  • 1/2 teaspoon parsley
  • 1/2 teaspoon salt


  1. Melt butter in stock pot. Saute onions, celery, and carrots until tender. Add garlic in the last few minutes.
  2. Stir flour, thyme, pepper, and salt into the butter mixture. It will become thick. Keep stirring.
  3. Whisk in 2 cups of broth and milk at once. Cook until thickened and bubbly.
  4. Add in peas, green beans, and the remaining broth.

I make something almost identical to this but I just call it chicken stew since I use pretty much the same veggies I do in beef stew. Yours looks delicious. :)
