Tuna Salad and Cucumbers

When I’m really watching what I eat, one of my favorite lunches is tuna salad on cucumbers.

You could make any old tuna salad that you like, but I will share mine with you below. Instead of eating it on bread, I just top a cucumber with a little bit. It’s like a veggie sandwich. Or maybe it’s like veggies and tuna dip. I don’t know…call it what you want, but it’s a great low calorie lunch!

Tuna Salad and Cucumbers

Yield: 1


  • 1 pouch tuna
  • 1 tablespoon mayo
  • 1 sweet pickle, small diced
  • pepper
  • cucumber, sliced


  1. Mix together tun, mayo, sweet pickle, and pepper. Refrigerate.

I tell you… Ever since you mentioned, back in the summer I think to add pickles to my tuna (which at the time I thought you were crazy… Boy was I wrong!) Anywho… ever since you mentioned it and I tried it, I have NOT had tuna without pickles since! I don’t think I ever will again. It is DELICIOUS and I usually eat it on a bed of lettuce with chopped tomatoes but I am LOVING the cucumbers idea!!! You are seriously making my hungry…

What an AWESOME idea!!! I always have tuna sandwhich with carrot chips can’t wait to try cucumber what a great combo!
