Hi everyone! Did you all have a great weekend? It was a whirlwind of a weekend here, but a good one for sure. My grandparents were in town so we got to spend the weekend with them! Consequently, I didn’t get my menu plan done ahead of time. So, I’m spending some time this morning catching up with emails and…planning my menu!
Monday- Out to Eat
Tuesday- Beans and Corn Bread; Salad
(I was the proud recipient of the ham bone from Sunday’s ham dinner!)
Wednesday- Leftover Beans and Corn Bread; Salad
Thursday- Provolone Pesto Chicken, Balsamic Brussels Sprouts, Salad
Friday- Out to Eat
Saturday- Tacos (freezer), Mexican Salad
Sunday- Steak with Pesto Couscous Salad

Hi Katie – When you say Mexican salad (to go with your tacos), what exactly do you mean? I’m always looking for a good go-with for tacos (my family doesn’t like spanish rice)…so I’m curious to see what this is.
Hi Carrie! If you aren’t into rice or beans….it is very difficult to come up with side dishes for tacos!
I do different things based on what I have on hand, but usually it is something like this: romaine, avocado, black beans, corn, and I make a chipotle ranch or a vinaigrette with lime. If I don’t plan ahead I just use a southwest ranch bottled dressing! And sometimes we nix the shells and just make a big taco salad!! Hope this helps
We are having an easy week round here. Keeping it simple now that soccer season is starting. I just told Tim Mondays will have to be a crock pot night
