Broccoli Salad with Craisins, Almonds, and Red Onion

Whenever I spot broccoli salad on a salad bar, it is always one of the first things I go for! I love it so much, but for some reason it’s always just been an occasional salad bar thing. One day I was trying to come up with a make ahead salad that would use up some broccoli I had and I remembered this lovely salad. I combined what I have loved about the different ones I have tried and I came up with something that was so delicious.

Broccoli Salad with Craisins, Almonds, and Red Onion

Ingredients

  • 6 cups small broccoli florets
  • 2/3 cup craisins
  • 1/2 cup red onion, small dice
  • 1/2 cup sliced almonds
  • Dressing:
  • 1 cup mayo
  • 1 Tablespoon cider vinegar
  • 3 Tablespoon honey

Instructions

  1. Whisk the dressing ingredients in a small bowl. Pour over the other ingredients. Mix well and refrigerate for a few hours before serving.

MMMMMM….I LOVE this stuff!!! And you version sounds delicious….AND…..waaaay less calories and fat than the normal salad bar version!!!!

I’m gonna have to make some and see if I can get the kids to eat it!!

Sounds delicious! This may seem like a dumb question, but should I steam the broccoli first?
