Turkey Italian Sausage and Potatoes

Every time I find Italian turkey sausage in the reduced bin I snatch it up.  I love it, but at regular price it’s on the expensive side for my grocery budget.  I love that it has so much flavor, but not a ton of calories.

Last time I found it was one of those rare nights when I hadn’t thought about dinner.  I resorted to my old days of walking the aisles at the grocery store deciding what we were going to eat that night…I remembered that day why I take the few minutes to plan a weekly menu.  What a time saver.

Normally I make my favorite sweet potatoes and sausage or slow cooked spaghetti sauce, but I didn’t have all of the stuff for either.  So, I tried this easy recipe I found online.  It was a quick dinner and only requires a few ingredients…a perfect way to use that reduced meat!

Turkey Italian Sausage and Potatoes


  • 1 lb. Italian turkey sausage (out of casing)
  • 6 medium potatoes, quartered and sliced into 1/4 inch slices
  • 2 medium onions, sliced
  • 1/2 teaspoon dried parsley
  • 1 tablespoon kosher salt
  • 1 teaspoon pepper
  • 1/2 teaspoon dried basil


  1. Brown sausage in a large oven proof skillet - breaking the sausage up as it cooks. Once browned remove the sausage from the pan - leaving the grease in the pan.
  2. Add the potatoes to the skillet and cook over medium heat (add a little oil if necessary). Flip the potatoes every few minutes so they don't burn.
  3. When the potatoes are halfway cooked (appx 10 minutes) add the onions, salt, pepper, parsley, and basil. Stir every few minutes and cook until onions are translucent.
  4. Add the sausage back into the skillet and toss to combine. Cover the pan with foil and bake for 20 minutes at 375 degrees. Remove the foil and bake for another 15 minutes - or until potatoes are cooked through.

I love this idea… I don’t know why, but I have never thought to pur sausage and potatoes together. I will definitely be trying this soon… well, the next time I beat you to the clearance meat sale. :)
