Peppermint White Chocolate Chex Mix {Gluten Free}

The other day I found myself in search of a quick sweet snack that was easy to munch on while crafting at girls craft night! I love peppermint treats this time of year, so I knew I had to try this recipe when I came across it. Since I can’t eat my usual candy cane cookies anymore, I figured I could get my peppermint fix in a slightly different way!

It sounded good, yet I was a little nervous how the peppermint flavor would go with Chex. I’m so glad I tried because it is SO yummy! It’s going in my Christmas recipe binder for sure. It doesn’t have an over pepperminty flavor either…it’s just enough.

Peppermint White Chocolate Chex Mix

Ingredients

  • 3 cups Rice Chex
  • 3 cups Chocolate Chex
  • 1 bag (12 oz.) white chocolate chips
  • 1/2 cup crushed peppermints
  • 1/4 cup chocolate chips

Instructions

  1. Mix cereals in a large bowl. Line a cookie sheet with foil or wax paper.
  2. In a medium microwaveable bowl melt the white chocolate chips, stirring every 30 seconds, until melted. Once melted, stir in half of the crushed peppermint. Pour over the cereal. Stir to combine and spread the cereal out on the cookie sheet. Sprinkle with the remaining crushed peppermints.
  3. Melt the chocolate chips and drizzle over the cereal. Let harden and break into chunks. Store in an air tight container.

Hi Cherie! It’s really good and worth the 5 minutes it takes to make it :) I will bring some for Christmas this weekend if I have some left!

This was absolutely delicious! I loved snacking on it during our craft night… Ry loved it. We said we are definitely making it soon!!! It was yummy! I brought some home to Tim and ended up eating it. Haha

Yeah…I thought you were taking it home for Tim ;) I’m glad you guys liked it! Daniel was glad to find a small bit left when he flew home today!
