Menu Plan Monday and Freezer Meal Gifts

I can’t believe it’s the week before Christmas already! It’s going to be a busy week around here (I assume it probably is probably the same in your home this week).

I’ve got all of my Christmas affairs in order already, so I’m going to spend the week freezer cooking. I’m really excited about it.  Our Sunday School class always helps out someone in need at Christmas time and this year we’ve decided to help more people and do things a little differently.  So we are making freezer meals for several families who can really use a helping hand and an expression of love right now.  It’s going to keep me busy, but what a great way to keep busy!

We each have gifts and I love how we can each use OUR gift to show Christ’s love to others!

Some of the meals I’m making are Chicken Tetrazzini, Spaghetti Pie, Chicken Pot Pie, Blueberry Streusel Muffins…if you are looking for meals to make for the freezer these are great proven tasty recipes!

Monday – Enchilada Lasagna
Tuesday – Leftover Enchilada Lasagna
Wednesday - Baked Ziti (with GF pasta) and steamed veggies
Thursday - Beef Cabbage Soup (from freezer) with cheese and crackers
Friday – Pumpkin Pie Baked Oatmeal with fruit
Saturday – Out to Eat
Sunday – Family Christmas

I LOVE freezer cooking… And doing it is daunting, but one of those things that I feel so accomplished afterwards! Ry is dying to make blueberry muffins from scratch now since last night… She would’ve stayed all night if she could have. LOL

Thanks again to you and Rylee for all the help last night! We got SO much done!! Well, I may just have to make the Sunday morning muffin girl some muffins when I make the other ones for the families :)
