Menu Plan Monday

by Katie on February 11, 2013

I’m afraid this week is going to be mostly a rerun from last week. I got as far as a big, huge grocery trip full of fresh veggies and it all came to a crashing halt.

Within hours of unloading all my groceries…Daniel came down with the flu or some kind of virus. Then I got some little virus or something, but thankfully I wasn’t nearly as bad as him. We ate jello, drank hot mint tea, and stayed away from each other all week. Nothing got done around the house – except for some crazy mad use of lysol wipes.

How annoying! We rarely get stomach viruses and the flu but it has been a disastrous year as far as sickness goes – He’s been sick twice this winter and I’ve felt permanently sick for the last month with either the flu, sinus infection, ear infections, or a terrible cough. Way to start 2013 off with a bang, huh?!?

Enough complaining. I’m sure most of you have dealt with sickness as well this year…it’s everywhere! This week I’m going to deep clean and bleach anything and everything I can in the house again. Then we are going to put on some nice clothes and I’m going wear my red heels and we are going to go out to a nice dinner downtown for Valentine’s day. ┬áIt’s got to be a better week than last week. :)

Monday- Barbecue Meatloaf with Roasted Broccoli
Tuesday- Flank Steak with Spinach Salad
Wednesday- Chicken Taco Salad
Thursday- Roasted Chicken, Veggies, and Sweet Potato (and maybe a Valentine’s dessert?)
Friday- Valentine’s Dinner Out
Saturday- Mexican Frittata
Sunday- Out to Eat

What’s on your menu this week?

Oh my, you all have really had a go around with the sickness this winter… It truly is everywhere. Thankfully, I did just hear on the news that they think we have reached the peak of flu season, so we should start seeing a steady decline. I know that doesn’t help while your sick, but once it’s out of the house… it’ll be gone until next year. :)

Your menu looks delicious as usual and your Valentine’s Dinner sounds great. ENJOY IT!!! We just had your chicken chili tonight… YUMMY! :)

Hope to get some tea time soon. :)
