Green Chile Egg Casserole {Gluten Free Adaption}

Everyone needs a good breakfast casserole or egg dish, or several, in their recipe box!

Wouldn’t you agree? This Green Chile Egg Casserole is a great one to add to your collection. I like to serve it for dinner topped with sour cream, salsa, and guacamole. I serve it with hash brown potatoes and fresh fruit. Yum – It is delicious!

I was hooked on Mom’s Breakfast Casserole, but it isn’t gluten free, so I’m not able to make it anymore. :(  But this is a good gluten free breakfast casserole (with slight adaptions).

It’s light and airy. Cheesy and flavorful. Delicious and easy. I know this will be one that we keep coming back to.  It’s also very customizable.  Have extra chicken, sausage, or veggies…throw them on in!

Green Chile Egg Casserole

Ingredients

  • 10 gggs, beaten
  • ½ cup flour (I use GF flour)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 pint cottage cheese
  • 12-16 oz. cheddar cheese, shredded
  • ½ cup melted butter
  • 1 - 7 oz. can diced green chiles

Instructions

  1. Mix all ingredients together. Pour into a greased 9x13 pan. Bake at 350 for 45-50 min, or until set.
  2. Top with salsa, sour cream, and guacamole. Enjoy!

Making this for dinner tomorrow night so we’ll have leftovers for Sat. morning!! I LOVE Mexican food too so this is perfect!!

I love Mom’s Breakfast Casserole and we make it ALL the time in our household. It is a favorite among the kids… This looks delicious, I will be trying it out soon for a change up.

You can make moms breakfast casserole gluten free by lining the bottom of the pan with corn tortillas. It tastes different but is still good.
