Mini BBQ Cheddar Meatloaves {Gluten Free}

Are you a meatloaf fan? I most certainly am. I’ve always loved it, and I like all different varieties. I know that to some, meatloaf is looked down on. If you haven’t been a fan in the past, this recipe my convert you to the meatloaf loving side. It has a delicious BBQ flavor and is bursting with gooey Cheddar cheese and caramelized onions.

This has become a favorite in our house and I’ve made it several times in the short time since I found the recipe at Iowa Girl Eats. The only thing I changed was the binding agent, from panko bread crumbs to certified gluten free oats, to make it gluten free. Mini BBQ Cheddar Meatloaves

Yield: 4 Servings


  • 1 large sweet onion
  • 1 Tablespoon butter
  • salt
  • 1lb lean ground beef
  • 1 egg, whisked
  • 1 Tablespoon Worcestershire sauce (make sure it is GF)
  • 1/4 cup + 2 Tablespoons BBQ sauce, divided (make sure it is GF)
  • 1/4 cup oats (I use Certified GF to make it GF)
  • pepper
  • 2oz cheddar cheese, cut into 1/4″ cubes


  1. Slice the onion in half and then each half into thin slices. Melt the butter in a skillet. Add onion and a dash of salt and cook until brown and caramelized, stirring every few minutes. (This will take about 20 minutes.) If they are starting to burn at all, turn the heat down. Cool slightly before adding to the meatloaf mixture.
  2. Preheat the oven to 425 degrees. In a large bowl combine the ground beef, egg, Worcestershire sauce, 2 Tablespoons BBQ sauce, oats, dash of pepper, cheese cubes, and caramelized onions. Mix until combined. Divide mixture into 4 equal-sized portions then form into loaves on a foil-lined, non-stick-sprayed baking sheet. Spread 1 Tablespoon BBQ sauce over each loaf then bake for 20 minutes, or until no longer pink in the center.
