Porcupine Balls with a KICK!

While I was browsing through my recipes today, I found these porcupine balls that I made back in the winter with Del Monte Diced Tomatoes with Chipotle. Remember that giveaway? Well, I made this recipe back when that was going on and I totally forgot about it.

Please tell me that I’m not the only forgetful one out there?

I have always been a fan of porcupine balls (I just love how they resemble porcupines with the rice sticking out all over). ┬áBut after I went gluten free I could no longer eat them because they used canned tomato soup (most canned soups are not gluten free). I’m sure there is some ridiculously over priced gluten free tomato soup out there, but why bother?

I knew the recipe could be converted fairly easily and these chipotle flavored tomatoes were just the push I needed! It’s a simple weeknight meal that is easily thrown together. I like to serve these meatballs over rice along with a green vegetable.

The meatballs so have a kick, but if you aren’t one for heat…no problem! Just use regular diced tomatoes and leave out the chipotle pepper!

Porcupine Balls with a KICK!

Ingredients

  • Meatballs
  • 1 pound ground beef
  • 1/2 large onion, diced
  • 2 cloves of garlic, minced
  • 1/2 cup white rice, uncooked
  • salt and pepper
  • 1 Tablespoon oil
  • Sauce
  • 1 - 14.5 oz. can diced tomatoes with chipotle
  • 1 - 6 oz. can tomato paste
  • 1 - 8 oz. can tomato sauce
  • water - 1 can full of water from the tomatoes with chipotle can
  • 1 tablespoon brown sugar
  • 1/2 teaspoon chipotle pepper

Instructions

  1. Mix together the meatball ingredients - except the oil. Shape into balls (about 1.5 inches in diameter).
  2. Brown meatballs in 1 Tablespoon of oil, turning to brown all sides. Remove from pan and drain on a paper towel lined plate. Drain grease (if there is a decent amount) and add sauce ingredients. Bring to a boil and add the meatballs back in. Cover and simmer for 20-25 minutes until meatballs are done.
