I’m going to let you in on a little secret!
We eat out too much!
I know…I have a cooking blog…you probably imagine me in an apron cooking up a storm with my heels and pearls on each night. Okay, that’s probably taking it a little too far?!?
I do cook a lot. But then there are those time when I feel too busy to cook or don’t know how late Daniel will be home or we have to run right after dinner time…and we grab something because it’s easy.
And I’m kind of tired of it. Eating gluten free limits the choices drastically and it gets boring and expensive to eat out. I’m tired of baked potatoes and salads. So, we are bringing it back home!
We will be cooking at home every day this week, breakfast, lunch, and dinner!
And to save time and dummy proof this menu I’ve made 3 of them crock pot meals!! If you can’t find time to throw things in a crock pot…you may have issues.

Spinach & Sausage Egg Scramble or Chocolate Peanut Butter Oatmeal (my new fave – it’s like a healthy no bake cookie!)

Monday- Ham Fried Rice
Tuesday- Pesto Ranch Crock Pot Chicken Thighs, Mashed Potatoes, and Green Beans
Wednesday- Buffalo Chicken Soup with Grilled Cheese (GF bread)
Thursday- Ranch Chicken Tacos (Crock Pot) with Easy Mexican Rice
Saturday- Meatloaf Supreme (GF oats instead of bread crumbs), Mashed Potatoes, and Peas
Sunday- Crock Pot Pepper Steak over Brown Rice
