Leftover Turkey From Thanksgiving Dinner? I’ve Got You Covered!!

by Katie on November 25, 2013

Planning on having leftover turkey after your delicious Thanksgiving dinner?

Leftovers are great, but they get old after a while.  So, I’ve got you covered with some recipes to use up your turkey!!

I wanted to share this list early so you can put the ingredients on your Thanksgiving shopping list so you have them on hand and won’t have to go back out to the store.  Sound good?

And remember you can always freeze extra turkey in freezer bags to easily add to your meals throughout the month.  The recipes below are listed as chicken recipes (because  I don’t make turkey often), but turkey can be easily substituted in them.

This Chicken or Turkey Tetrazzini was always a favorite freezer meal for us (pre gluten free) and is a super popular recipe on the blog. It’s easy to make the day after Thanksgiving when you don’t feel like cooking a big meal. And as a bonus you can whip up double and freeze one!

Chicken or Turkey Pot Pie is a pure comfort meal. Add in cooked turkey and leftover veggies and you will have dinner on the table in no time. As a bonus, this is a great freezer meal as well!

Dinner can’t be easier than these Stuffed Poblano Peppers. Mix your turkey, beans, salsa, and cheese and place in the poblano and bake. So simple, but the taste is awesome. Poblanos are pretty much the best pepper.

This Mexican Chicken Soup happens to be one of my favorite soups. We love having a hot bowl of soup for dinner on a cold night. And this one is sure to warm you up!

Sour Cream Enchiladas with Green Chiles…makes my mouth water just thinking about them.  I’m a sucker for a good enchilada.  Especially one with a sour cream sauce and green chiles.  Delish!

Creamy Chicken and Rice soup is my version of the one served at Panera. It’s delicious, creamy, warm, and just a great soup!! It’s a great way to use up your turkey!

What are you going to make with your leftover turkey?
