I’m back! We returned last week from a week and a half long cruise in the the Caribbean. It was nice to get away, relax, and take a big break from cooking! We finally had to come back to this cold weather and now it’s time to start menu planning again.
Along with our meals, I’m planning on doing some Christmas candy making (buckeyes, peppermint bark cups, fudge, caramels, and hard tack candy). I’m also going to whip up some hot chocolate and peppermint hot chocolate mix to give out (and a lot to keep for myself)! And last, but not least, I’m going to cook a ton of chicken and freeze it for easy meals.

Monday- Grilled Cheese and Beef Cabbage Soup (freezer)
Tuesday- Kale and Goat Cheese Crustless Quiche, Sweet Potato Hashbrowns, and Fruit
Wednesday- Roasted Cauliflower and White Cheddar Soup and Salad
Thursday- Meatloaf Supreme, Make Ahead Mashed Potatoes, and Peas
Friday- Out to Eat
Saturday- Family Christmas
Sunday- Pesto Chicken Pizza (with Frozen Pesto Chicken)
