Chicken Tortilla Soup {with PUMPKIN}

Thanks to my sister, I’ve got what may seem like the weirdest combo that I’ve ever posted.

Chicken Tortilla Soup made with PUMPKIN! 

Sound gross?  Well, you are going to have to trust me on this. Seriously – TRUST me and just make this.

It’s my favorite Mexican type soup. I think. I’ve also posted Mexican Chicken Soup, Chicken Tortilla Soup, Chicken Enchilada Soup, and Chicken Chili which are all Mexican type soups.  And are all great.  What can I say…I love Mexican food and I love soup.

Chicken Tortilla Soup {with pumpkin} | 30 minute meal, pantry meal, freezer meal

Another thing that makes this awesome is that it is a pantry meal. That simply means that all ingredients can be stored in the pantry for a quick 30 minute meal. Or you could even throw it all in the crock pot.

I always try to keep bags of cooked and diced chicken in the freezer and besides that it’s just chicken broth, canned corn, canned beans, salsa and a can of pumpkin. All canned items. I try to keep it all in the pantry for those times I have nothing to cook!?!

By the way, you can’t taste the pumpkin at all in this, but it gives it a nice consistency and texture!

Chicken Tortilla Soup {with PUMPKIN}

Yield: 6 servings


  • 1.5 pound chicken, cooked and diced
  • 1 can of pumpkin
  • 1 32oz. carton chicken broth
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 3/4 cup salsa
  • 1 Tablespoon olive oil
  • 2 cloves garlic
  • 1 Tablespoon chili powder
  • 1 Tablespoon cumin


  1. In stock pot heat the olive oil. Add in the garlic and sauté. Add in the chili powder, cumin, and chicken - stirring to combine. Add in the chicken broth, beans, pumpkin, corn, and salsa. Heat over medium heat for about 30 minutes - stirring occasionally.

Hi, just wanted to thank you for a meal/savory dish with pumpkin! I have a few in the pantry I need to use and didn’t want fall treats in the summer, this is perfect and the crock pot too, thanks!
