My goodness – this crazy week has just flown by. Removing baseboards has consumed a decent amount of my time. In the middle of it all I realized we have a lot of baseboards…

I had a hard time Monday and struggled to get out what I could with my tools, but a quick trip to Lowe’s and a brand new pry bar solved all of my problems. That pry bar was my BFF for the week…it’s a beast! (I totally hate the term BFF by the way….why did I just say that?)

This is all really hard work and not even the best manicure could help the state of my nails, but I’m loving learning how to do all this stuff myself. That said, I DO NOT feel like cooking a nice meal when I’m sweating and dirty from working. That is where this wonderful crock pot meal comes in. It’s so nice to throw it all in and forget about it!

These Pesto Ranch Chicken Thighs are delicious!  I’m not usually one for dark meat, but tried it in this recipe and was surprised that I really did like it. The chicken was nice and juicy and had an amazing flavor. If you like chicken breasts, you could use those for sure instead.

I had a good amount leftover and I froze it for pesto pizza (crust, pesto, cheese, pesto chicken, mozzarella and other toppings you like). It was great both ways!!

Pesto Ranch Chicken Thighs {Crock Pot}

Ingredients

  • 8 boneless skinless chicken thighs
  • 6 ounce jar of pesto
  • 1 package Ranch Dressing Seasoning Mix
  • 1/2 cup chicken broth

Instructions

  1. Place chicken thighs in crock pot. Top with pesto, ranch seasoning, and chicken broth. Stir a little to combine the ingredients. Cook on high for 3-4 hours or 6-8 hours on low.

These sound good and different for a change of pace. I may just have to try them. :) You inspire me, I am so proud of you for all the stuff you manage to do.
