Wow…it’s been a while since I’ve written a menu plan post. It’s been a while since I’ve really planned a menu, come to think about it. With all of the house projects going on it has been survival mode for food. Then we were on vacation – and wow…we had some awesome food in Colorado.
After all that it’s time to get back in the kitchen. I got my only cake and cookies this week DONE and we are headed out of town for my husband’s grandpa’s 90th birthday party this weekend so I didn’t book any cakes for later this week.
I’m taking advantage of it by working on painting the kitchen cabinets. It’s nice to be able to mess everything up and not feel the pressure that I have to get it back in “baking condition” right away. Just cooking for us I don’t care as much what condition it’s in.
Here are our easy, but delicious, meals for this week…I sure am tired of eating out.

Leftovers or Lunch Meat Roll Ups
Monday- Mexican Rice Casserole (with shredded chicken), Corn Tortillas, Sauteed Zucchini
Tuesday- Breakfast Tacos (potatoes, chorizo, and eggs), Fresh Fruit Salad
Wednesday- Chicken Burgers, Grilled Sweet Potatoes with Lime, Grilled Peppers and Onions
Thursday- Zucchini Crust Pizza Casserole, Fresh Fruit Salad
Friday- Leftovers or Breakfast
