Menu Plan Monday

by Katie on July 7, 2014

Wow…it’s been a while since I’ve written a menu plan post.  It’s been a while since I’ve really planned a menu, come to think about it.  With all of the house projects going on it has been survival mode for food.  Then we were on vacation – and wow…we had some awesome food in Colorado.

After all that it’s time to get back in the kitchen. I got my only cake and cookies this week DONE and we are headed out of town for my husband’s grandpa’s 90th birthday party this weekend so I didn’t book any cakes for later this week.

I’m taking advantage of it by working on painting the kitchen cabinets. It’s nice to be able to mess everything up and not feel the pressure that I have to get it back in “baking condition” right away. Just cooking for us I don’t care as much what condition it’s in.

Here are our easy, but delicious, meals for this week…I sure am tired of eating out.

I would love to hear what your looking forward to making this week!

I can’t wait to hear all about your trip in Colorado. Sounds like such a great time… Your breakfast tacos sound yummy, share the recipe if you can. :)

I didn’t take pics of the recipe so I won’t be sharing it soon. All I did was brown some sausage and then drained grease and scrambled some eggs in with it and added a little cooked hash brown potatoes. I put it in taco shells (we used soft) and we topped them with cheese, salsa and any other fixings. They were really yummy!
