Humana Vitality Recipe Refresh Challenge

A few weeks ago I had such an awesome opportunity to share my love of healthy cooking as a team captain at a Humana Vitality Recipe Refresh Challenge. It was held here in Cincinnati at the Midwest Culinary Institute and it was SO much fun! I was so honored to be asked to participate!!

As a team captain I worked with my team in refreshing a traditional recipe by making it healthier…without sacrificing taste, of course!  It was great evening and I even got to keep the awesome chef coat.

We started off the evening with a demonstration on how to make Mayo-Free Avocado Chicken Salad. I make my chicken salad this way all the time…it’s so good!!  Using greek yogurt instead of mayo is a great way to refresh your recipes!

After the cooking demonstration from Chef Meg Galvin, we broke up into smaller groups and created our assigned recipe. My group made Bell Pepper Turkey Nachos. It was so much fun to cook together and talk about our cooking tips and ways to make family favorites healthier!

After each team finished up their recipes we came back together and sampled them all! I couldn’t eat a few of them because they weren’t gluten-free, but they sure looked delicious. The other groups made Thai Chicken Pizza, Spinach Mac and Cheese, and a Sweet Potato Cauliflower Mash.

My Bell Pepper Turkey Nachos were a take on regular nachos. They were lightened up by using crisp mini bell peppers instead of tortilla chips and turkey instead of ground beef. They were packed full of flavor and absolutely delicious!

Wow…thanks. ;) Yes, it does take work to be healthy and revamp recipes to be healthier but it’s worth it!!

This looks like so much fun! What a great evening! I was thinking and praying for you the whole day leading up to it and it is great to finally hear about it and see pictures. :)
