Bell Pepper Turkey Nachos

A few weeks ago I attended a Recipe Refresh Challenge put on by Humana Vitality. I worked as a team captain and my team transformed typically unhealthy nachos into something just as tasty but much healthier – Bell Pepper Turkey Nachos!

Bell Pepper Turkey Nachos Recipe

They were SO delicious and SO easy to make! I love me some nachos, but I have to say that I think I like the bell pepper nacho better. The mini peppers provided just the right amount of freshness and crunch.

Whoever thought of using a mini pepper instead of a chip is genius! Pure genius! Why have I never thought to do that?

Anyways, these nachos are healthy, but so full of flavor. They have salsa and garlic and cumin and all kinds of great flavors in them. You have got to try them!
