Barbecue Chicken Salad with Avocado Lime Dressing

What do you do when you are running low on grocery money?  You scour your pantry and refrigerator and see what you already have that you can pull from – because then it’s “free”!  And I don’t know about you, buuttt, when it’s free it’s for me.  Just sayin’.

Surely I’m not the only one who does this? I feel like it’s super hard to keep my budget low if I don’t do this.

If you don’t do this pantry raid thing you are seriously missing out on a great way to keep your grocery budget low.  We all have odds and ends that can be used and thrown together – and often those make the most delicious meals because they force you to get your creativity flowing!

Let me introduce you to Barbecue Chicken Salad with Avocado Lime Dressing – a pantry and produce throw-together!

Every part of it was made from things that I had and needed to use…leftover barbecue chicken, leftover grilled corn, avocados that were ripe, lettuce from the never-ending Costco container.

(On a side note – anyone purchase those giant lettuce containers at Costco? I feel like it grows more lettuce every night when I go to bed or something. It’s less than $5 and never ending.)

My grocery budget has been having some issues lately.  I think the reason is because of so many get-togethers this summer and I’ve been so preoccupied with these house projects to worry about budget.  Oh, and maybe the fact that food is so stinking expensive anymore…that could be a contributing factor.

I take my money out in cash, so I haven’t really been going OVER budget, but I’ve been barely getting by these past two months.  I think I have $45 for the remainder of this week and all of next.  Yikes!

Meals like this really help out because they use up what we have already.  You could use all kinds of leftovers to make creative salads!

Barbecue Chicken Salad with Avocado Lime Dressing

Yield: 4 servings

Barbecue Chicken Salad with Avocado Lime Dressing


  • Salad
  • lettuce
  • 1 can black beans
  • 1 cooked chicken breast, tossed in barbecue sauce
  • 2 ears of corn, cooked and cut off cob (or canned corn)
  • 1 avocado, diced
  • 2 roma tomatoes, diced
  • 1/2 cup Cheddar cheese, shredded
  • Dressing
  • 1 avocado
  • 1/2 cup Greek yogurt
  • 1/4 cup cilantro
  • 1 garlic clove, finely minced
  • 1/2 lime, zested and juiced
  • water


  1. Fill four bowls or plates with desired amount of lettuce. Top with barbecue chicken, black beans, corn, avocado, tomatoes and Cheddar cheese. Top with dressing.
  2. To make dressing: Place avocado, yogurt, lime zest, lime juice, garlic and cilantro in a blender. Blend to combine. Add in water by tablespoonful until it reaches desired consistency. (It will remain a slightly thick dressing.)
