Taco Zucchini Boats and Home Improvement Projects

Have you heard about zucchini boats? I guess I’m pretty much behind the times when it comes to cool and trendy food, because I just discovered these gems. Apparently, they have been around for a while?!

I saw Skinny Taste’s Taco Zucchini Boats and was inspired to pull a bag of pre-cooked ground beef from the freezer and throw my version together using only things I had on hand. They made the most delicious dinner that was both healthy and packed full of flavor! I’ve got so many different ideas for these zucchini boats in the future!!

Maybe I’m behind the times on food (and pretty much everything else) because I live in a home improvement bubble. Seriously. My days are spent doing what I like to call “man work” –  I’m usually fairly feminine, so this is a change of pace from my normal girly things.

This has all been more of an undertaking than I realized, but I am taking pride in learning new skills!

I never want to be that girl who demands that my husband do everything. I find that so annoying when women do that. Women are capable too – just sayin’. I mean…If I can do it – anyone can.

Today I’ve been working on ripping out the slate tile backsplash, without damaging the wall behind it, so we can install white subway tile. The good news is that I’m somewhat ambidextrous, so I’m able to switch to swinging with my right hand when my left arm is tired.

Does that make me really talented or can everyone accurately swing a hammer with both hands…I don’t know? I’m going with the first option until I hear otherwise. Yep. I’m talented.


Back to those zucchini boats…here is the easy and healthy recipe! A great way to lighten up traditional tacos and if you are doing the low-carb thing there are perfect for you!

Taco Zucchini Boats

Yield: 4 servings

Taco Zucchini Boats


  • 4 zucchini
  • 1 pound ground beef
  • 1 small onion, diced
  • 1 clove garlic
  • 1 packet taco seasoning (check label for GF - I normally just make my own to be safe)
  • 1 (8 oz.) can tomato sauce
  • 1/2 cup Cheddar cheese, shredded


  1. Place 2 Tablespoon of tomato sauce in the bottom of a 9x13 baking dish.
  2. Cut zucchini in half lengthwise and scoop out the insides - leaving about1/4 inch shell. Reserve 3/4 cup of the zucchini (diced).
  3. Brown the ground beef. Drain grease. Add in onion and garlic and cook for a few minutes, until onion begins to soften. Add in remaining tomato sauce and the taco seasoning. Simmer on low for 10 minutes. Then add in the remaining 3/4 cup diced zucchini.
  4. Meanwhile, fill a stockpot with water and bring to a boil. Once boiling, add in zucchini halves for 1 minute to blanche. Remove and drain. Place the zucchini halves in the 9x13 dish.
  5. Add the beef filling to the zucchini halves. Top with cheese. Cover with foil and bake at 350 for 35 minutes.

Katie….I think these look delicious!!! I really like zucchini….but never fix it because
it seems not worth it for “just me” :+(

It’s hard to get an old Papaw to try new things…..sigh….I get SOOO tired of green beans and corn and peas…..he is hopelessly BORING!!!!!!!

P.S. He WILL eat zucchine bread though…doctor that veggie up with lots of cinnamon and sugar….HeeHee

Yeah…I hate making things when I’m the only one eating them!! Not worth the time it takes.

Who wouldn’t like zucchini bread…it’s awesome! I just posted a delicious chocolate one the other week…I’m sure he would like that. LOL
