No Bake Avalanche Cookies

Random fact about me – there is a pretty good chance that I may be the worlds biggest peanut butter lover!

Okay, scratch that…that’s probably a stretch because, well, you knowww…there are some pretty crazy people out there. Have you seen those shows where people only eat one thing in life?  I saw one where this woman only ate french fries – morning, noon and night. It was the strangest thing ever.

I’m assuming none of you have that problem.  If you did you would have no reason to read this blog.  The upside would be that you wouldn’t need to menu plan or make a grocery list.  Load the cart with frozen fries and you would be on your way.  Easy peasy.

I’m sure there are some strange people who eat peanut butter for every meal instead of french fries. I clearly don’t take my love that far – I leave it in the dessert arena so I’m pretty sure I would be disqualified for WORLDS BIGGEST fan.  No wait, I do eat it for breakfast sometimes…so maybe I’m on my way to freakiness.

No Bake Avalanche Cookies - just 4 ingredients and they take no time at all to whip up!  Plus they are GF if you use GF Rice Krispies!

I prefer my peanut butter with chocolate.  In fact, I’m eating some mini Reese cups as I type this.  The minis aren’t nearly as good as regular size, but what can I say…Halloween candy sale.  You take what you can get when you are a cheap-o.  I have my Reese’s ranked from best to worst – this is where my husband and I part ways…we disagree on the Reese’s.

  1. White Chocolate Reese’s Cups
  2. Reese’s Eggs
  3. Dark Chocolate Reese’s
  4. Regular Reese’s Cups
  5. Mini Reese’s Cups.

I wasn’t kidding when I said I had them ranked. Surely you have done the same thing with your favorite candy?

Are you a big fan of peanut butter and chocolate like me? If so, you need to make some of these up SOON! With the holiday’s coming up they would make great gifts if you are looking for a homemade treat, but don’t have the time to bust out the rolling pin to roll out sugar cookies. They would be great in a tin or package for neighbors or teachers.

No Bake Avalanche Cookies

Ingredients

  • 2 cups Rice Krispies (I used GF Rice Krispies)
  • 1 cup mini marshmallows
  • 1/2 cup creamy peanut butter
  • 1 lb. white chocolate

Instructions

  1. Line to baking sheets with parchment paper or wax paper. Set aside.
  2. Add the Rice Krispies and marshmallows to a large bowl. Set aside.
  3. In a double broiler melt the white chocolate and peanut butter together. Once melted, pour over the cereal mixture and mix to combine well.
  4. Drop by tablespoonful onto the wax paper. Place in the refrigerator to set up. Store in an airtight container for up to 5 days.

OK…you know me and cookies!!! Next time I’m at the grocery…I’ll be buying some white chocolate!!!! Got everything else or I would be having them for breakfast right now!!!!!

Oh…and tell your Dad…..GO Browns!!!! LOL :+)
