Gluten-Free Cinnamon Chip Cookies

I love all of the seasons for different reasons, but my favorite of the seasons is fall! I love pulling out my boots and fall decorations, but most of all…I love that it’s baking season! I’m constantly baking cakes for customers, but when fall arrives I really get the baking itch to bake things for US to eat!

I had a package of cinnamon chips just staring back at me in my pantry for too long so I decided to put them to good use and make some cookies…just look at those cinnamon beauties below.  They scream fall.  And eat me.

I really didn’t have any experience baking with I Can’t Believe It’s Not Butter!® so I was really excited when I was approached to try it.  Oh, I knew it would be great as a spread and I used it in my fried rice with great success, but I wasn’t sure how it would hold up in my baking.  So I put it to the test with these cookies.

I was impressed!  I hate things that have all kinds of ingredients that you can’t even pronounce!  Don’t you?

I took my regular chocolate chip cookie base and added lots of dark brown sugar, cinnamon and cinnamon chips to it.The result was a delicious cinnamon cookie that is packed with flavor! They have a slight crunch on the outside and are soft and chewy on the inside. You have got to make you some!

And the verdict on the new I Can’t Believe It’s Not Butter!®?

The cookies turned out fantastic and had a great buttery flavor. Honestly, they turned out just how my cookies normally would with butter. All natural ingredients, fewer calories…pretty awesome!  I also really loved that it is already soft so I didn’t have to wait for my butter to soften. You should definitely give I Can’t Believe It’s Not Butter!® a try with your Christmas baking!

Cinnamon Chip Cookies {Gluten Free}

Yield: 2 1/2 dozen


  • 2 1/2 cup of gluten free flour blend (11.25 oz.)
  • 1 teaspoon xanthan gum (if your blend doesn't include it)
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 8 tablespoons I Can't Believe It's Not Butter
  • 3/4 cup sugar
  • 3/4 cup dark brown sugar, packed
  • 1/2 teaspoon cinnamon
  • 2 eggs
  • 1 teaspoon vanilla
  • 10 oz. bag of cinnamon chips


  1. In a medium bowl combine the gluten-free flour, salt and baking soda. I like to weigh my flour with a food scale and just add the salt and baking soda after weighing and it saves washing another bowl.
  2. Combine I Can't Believe It's Not Butter in the bowl of a mixer. Add in sugar and brown sugar and cream together. Add eggs and vanilla and mix just until eggs are mixed in. Add in flour mixture and mix on low or with a spatula. Stir in the cinnamon chips.
  3. Refrigerate for at least one hour. Preheat oven to 350. Drop by tablespoonful on a baking sheet and flatten slightly with your hand. Bake for 8-10 minutes - the sides should hold their shape, but you don't want them browned on top.
