Easy Taco Soup

Are you looking for a way to stay warm? If you live anywhere near me I’m sure you are. It’s downright frigid this week in Cincinnati. I mean frigid.

The best way to combat it is to stay inside and fill yourself up with some nice hot soup. This Easy Taco Soup is a great soup to make because it’s just like it’s says – easy.

This is one of my go-to soup recipes and I love the ease of it, but it’s also super tasty and healthy.

I’m not always great about it, but I try to keep cooked ground beef in the freezer to pull out to make easy meals like this even easier (or if you are really on top of things you can make this soup up and store in the freezer). Everything else is in this recipe is a pantry item so its great to keep them all on hand for an emergency dinner!

An emergency for me is like when you hear that the great white death is coming. You don’t have to scramble and run to the grocery like everyone else…you can just sit back and drink a cup of hot chocolate, enjoy the snow and pull the items out of your pantry!

I went on Monday (unassumingly…just to get normal groceries) and I promise you the WHOLE state of Ohio was in my grocery store. It was insane. Okay, maybe not the whole state, but at least the whole city of Cincinnati.

It was unreal!!  No parking places. No milk. People running around frantically. Huge lines with rude people. I had no idea what was going on and came home to the new that we were getting a few inches of snow. A FEW inches. Not a blizzard, but a FEW inches of snow.

You would have thought these people were going to be stuck in their homes for days on end.

Reminder to self: Never go grocery shopping when they are predicting snow. Never. If I just keep all of the pantry items for this soup on hand and I will be good. Or maybe eating dog food would even be better than fighting those people if it came to that. I don’t know…

Easy Taco Soup


  • 1 lb. ground turkey or ground beef
  • 1 medium onion, diced
  • 1 can Diced Tomatoes
  • 1 can Rotel Diced Tomatoes
  • 1 can Black Beans, rinsed and drained
  • 1 can Kidney Beans, rinsed and drained
  • 1 can Corn, drained
  • 1 packet Taco Seasoning (check label for gluten-free, if needed)
  • 1-2 cans Water, from tomato can


  1. In a stock pot, brown the meat and onion. When cooked through, drain the grease.
  2. Add the diced tomatoes, Rotel, black beans, kidney beans, corn, and taco seasoning packet to the pot. Stir and add in 1-2 cans of water, depending on how thick you like it.
  3. Bring to a boil over medium heat. Reduct heat and simmer for 20-30 minutes. Serve with sour cream, cilantro and/or cheese, if desired.

Yes, Pam! Well, okay…maybe that’s a slight exaggeration. Don’t worry, I have not resorted to forcing your son to eat dog food yet. ;)

Hmmmmm….wonder what dog food/taco soup would taste like….you know just replace the hamburger with some Alpo!!!

Ummm…yeah…not so sure about the dog food taco soup! If I try it I will hand deliver some to you to try, too. ;)

OH…totally forgot to say that I LOOOVE this soup….topped with some nice shredded cheese, a few fritos…and…….with a nice “dollop of Daisy” HeeHee

I’m glad!! Yes – cheese, fritos and the dollop of Daisy are MUSTS for topping!!

I posted it last year on a blog I was contributing for and realized when I went to get the recipe for myself again that the recipe wasn’t on my own blog!! I had to add it…it’s too good not to. :)
