Menu Plan Monday

Happy Monday!  This is an exciting week for me because I have my first essential oil class on Saturday.  I’m so excited to share how these crazy oils have changed so many things for me.

Speaking of essential oils, I will be sharing a post this week on how I use them daily! I’ve got it drafted and just have to finalize it, so look for it later this week.  In the meantime feel free to check out this post where I shared a little about them. They have changed my life and I’m just so excited to share them with the world. ;)

Because of this final push to get all of my house projects DONE this week I’m going to be keeping the dinners EASY! I’m sure you all can relate.

Breakfast: Spinach and Sausage Scramble, Overnight Oats (I am LOVING the convenience factor here)

Lunch: Veggies and Hummus, Lunch Meat Roll Ups, Leftovers

Dinner:
Monday- Roasted Veggies and Sausage over Quinoa
Tuesday- Perfect Potato Soup and Green Chile Corn Muffins
Wednesday- Costco Chicken (what a deal!), Balsamic Roasted Brussels Sprouts and Butternut Squash
Thursday- Chicken and Broccoli Casserole
Friday- Out to eat
Saturday- Out to eat
Sunday- BBQ Pork (freezer), Chips, Fruit

When I think of easy dinners, it is not your menu… :) It sounds great, as always! I am really looking forward to the class Saturday
