Menu Plan Monday

Did you have a great Valentine’s day Saturday? Me? It was just a normal day. I’m not really into Valentine’s day…it’s just not a big deal to me. It’s so little of a deal, in fact, that we don’t even exchange cards. I told my husband a few years ago to not worry about buying me a card…just take me out for a Starbucks drink instead. So that’s what we did…

And then I came home and baked cupcakes and we ate a frozen gluten-free pizza (Costco) because I didn’t feel like cooking. Speaking of cupcakes, I baked an awful lot of those on Thursday. I do a big Valentine’s day cupcake special with my cake business and it gets pretty crazy around here. I may not be into cards, but if I wasn’t gluten-free and I didn’t make the cupcakes I totally would have been down with a box of those as a gift.

Are you really into Valentine’s day? What did you do to celebrate?

Breakfast: Mason Jar Overnight Oats, Eggs, GF Waffles (I bought these at Costco…I haven’t had a waffle in forever and just couldn’t pass them up!)

Lunch: Veggies Burgers with Steamed Veggies, Lunch Meat Roll-Ups or Leftovers

Dinner:
Monday- Shepherd’s Pie, Homemade Applesauce (frozen)
Tuesday- Mini BBQ Cheddar Meatloaves, Mashed Cauliflower, Oven Roasted Broccoli
Wednesday- Homemade Mixed Bean Soup with GF Corn Muffins 
Thursday- Baked Steak, Make Ahead Mashed Potatoes and Peas
Friday- Chicken Sausage and Sweet Potato Skillet, Steamed Veggies
Saturday- Out to dinner
Sunday- BBQ Pork (freezer)

A lot of times we celebrate Valentine’s Day together as a family and this year was no exception… We took the kids out for the afternoon and then went out for dinner as a couple. Of course, can’t forget the YUMMY cupcakes!!! :) Every day should be Valentine’s Day honestly… :)

Our neighbors eat Kroger Simple Truth GF Blueberry waffles and Hope loves them!!! Just a little FYI in case you see them on sale. :)

I have been meaning to try those Mini BBQ cheddar meatloaves of yours… They sound FANTASTIC!

Sounds like a fun Valentine’s day!! Glad you two got to go out, too!!

I will have to keep an eye out for the waffles!! Tried the Costco ones yesterday and they are delicious. It’s been so long since I’ve had a waffle!?
