Menu Plan Monday

by Katie on March 2, 2015

I’ve found a lunch that I really love and want to eat every day. I do this from time to time. I find something awesome and healthy (or not so healthy) and I just stick with it and eat it all the time. It’s roasted veggies and chicken sausage. I will post the recipe here soon (if you can call it that). It’s super easy and addicting and perfect for a lunch or dinner when you don’t have much time at all!

The other thing we have been loving is overnight oats. I will post a recipe for that too really soon. We eat it ALL the time. I put all of the ingredients in a mason jar – stir – and wake up to a ready made breakfast. Can’t beat it!

What meals do you find yourself always coming back to?

I am totally going to google Overnight Oats… That sounds too easy… Of course, the hardest part would be remembering to start breakfast the night before… like remembering to leave meat out. :)

Because I love you I will share the recipe now, Misty. LOL.

In a mason jar…pint size I think? Add 1/2 cup oats (old-fashioned not quick), 1/3 cup yogurt, 1/2 cup milk, a teaspoon or so of honey, and add in mix ins like fruit. Sometimes I add PB2 and bananas and sometimes it berries. Give it a good stir and put in fridge overnight. You can make a few up at a time.
