Menu Plan Monday

Have you sat down to make a quick menu plan this week?  If you haven’t yet, you should try it!  I promise it saves time in the long run!

I sat down yesterday to do mine.  I also went to the grocery store and took a big old trip to Costco.  Is it just me or does everyone spend too much money when they go there? It’s insane. I want to throw half of what they have in my cart…it’s a good thing I grocery shop on a cash budget. :)  I went for fresh produce and left with that PLUS some other items, athletic capris, flowers and a few other things?!

Breakfasts:
Eggs and Chicken Sausage, Overnight Oats or Fruit and Yogurt Parfait

Lunch:
Leftovers, Greek Salad with Hummus, Sweet and Spicy Roasted Veggies and Chicken Sausage

Dinner:
Monday- Out to eat
Tuesday- Antipasto Salad
Wednesday- Green Chile Egg Casserole and  Fruit Salad
Thursday- Grilled Fish, Sesame Sautéed Sugar Snap Peas,  Microwave Baked Sweet Potatoes
Friday- Greek Chicken, Oven Roasted Broccoli and Cauliflower, Salad
Saturday- Out to eat
Sunday- Spaghetti Squash with Italian Sausage Spaghetti Sauce and Steamed Broccoli
