Happy Monday! With summer here I have been taking my menu planning pretty lightly because it’s super easy to throw together a dinner when it’s grilling season. I much prefer having a detailed plan, but when I don’t I can cut some veggies and thaw some meat and we have dinner!
Something new in our home is that we have joined a CSA. I have wanted to do this forever and never found the right farm – they were either all booked, too far of a drive, or too expensive. I hadn’t looked into it for a year or two and Daniel and I were talking the other week about how it would be awesome to find one. I started looking on my ipad and came across Rice Family Harvest. Not only could we still join, but they deliver to my door. If you are in the Cincinnati/Dayton area and love fresh produce you should look them up.
This past week we got kale, salad greens, baby spinach, cherry tomatoes, tomatoes, cucumbers, zucchini, squash, green onions and the best strawberries. We will finish up our produce today, and more comes on Wednesday so it’s working out perfect.
Because of this, my menu plans won’t be exact…because I don’t know what I’m getting! I love that part – it’s forcing me to think outside the box and create new things!
Monday – Southwestern Omelets (cheese, green onions, avocado and spicy chicken sausage with salsa) with Mixed Greens with Balsamic Dressing
Tuesday- Spaghetti Squash Lasagna with Ground Turkey, Salad
Wednesday- Grilled Coconut-Lime Cod Packets with Fresh Sliced Fruit
Thursday- Grilled BBQ Chicken, Grilled Veggies, Cucumber and Onion Salad
Friday- BBQ Chicken Salad (with leftover grilled chicken)
Saturday- Out to eat
Sunday- Out to eat
