I mentioned a few weeks ago that we have started having our produce delivered from a local farm. I’m SO loving this service. I keep meat in the freezer and staples on hand and I always have a healthy meal that I can whip up quickly. I don’t know how I’m just now signing up for a service like that. Okay – I do know why…it’s because I didn’t know about anything like this. Seriously though, it’s awesome. Plus the produce is all great quality – check out Rice Family Harvest if you are in the Cincinnati area.
This past week we got tons of blueberries as well as pickling cucumbers, tomatoes, cherry tomatoes, romaine, broccoli, cucumbers, zucchini and squash. I’m used to most of those veggies, but I had no idea what to do with pickling cucumbers. I short Pinterest search, a quick trip to the grocery and I had refrigerator pickles ready to eat before I knew it. Boy are they delicious (recipe to come soon)!
Another food we’ve been loving is fresh Georgia peaches! The Peach Truck has made it’s way to Cincinnati and after tasting them I was SO thankful I bought 25 pounds.
I’m loving all of the fresh produce we have had so far this summer! Our dinners will consist of that most nights this week…whatever comes in our CSA box.
Breakfast: overnight oats with fruit, hard boiled eggs or cereal
Lunch: leftovers, chickpea salad (recipe coming this week), chicken salad
Monday- Grilled Chicken Salad (Peach Blueberry Cobbler for dessert)
Tuesday- BBQ Turkey Meatloaf, Rice, and Sauteed Zucchini
Wednesday- BLT Sandwiches, Fresh Veggies, Sweet Potato Fries
Thursday- Zucchini Boats, Oven Roasted Broccoli
Friday- Family cookout
Saturday- Family cookout
Sunday- Chicken and Kale GF Ravioli (a new Costco find) with salad
